Garden Fresh Tuna Salad Sandwiches

Lighten this perennial favorite by adding lots of crisp vegetables to the tuna.

(6-oz.) can water-packed tuna, drained, flaked

cup chopped seeded cucumber

cup shredded carrot

cup chopped green onions
1/4
cup nonfat mayonnaise or salad dressing

tablespoons nonfat sour cream

tablespoon lemon juice

leaves leaf lettuce
8
slices whole wheat bread, toasted if desired
  • 1 In medium bowl, combine tuna, cucumber, carrot, onions, mayonnaise, sour cream and lemon juice; mix well. Place 1 lettuce leaf on each of 4 slices of bread; spoon and spread 1/2 cup tuna mixture onto each. Top with remaining slices of bread.
