Fruity Rugelach Cookies

My husbands aunt used to make these cookies, making her own dough. I've discovered that Pillsbury Refrigerated Pie Crust works deliciously!

Ingredients

1 - Pillsbury® Refrigerated Pie Crust (at least 1 crust) 14.1 oz box
½ c brown sugar
¼ c walnuts chopped
¼ c mini chocolate chips
½ c apricot or raspberry preserves

  • 1 Unroll the two dough rolls from one box of crust.
  • 2 Cut each in half.
  • 3 Separate so you have 4 halves
  • 4 Mix the brown sugar, walnuts and chocolate chips
  • 5 Spread 2 halves of each crust with apricot or raspberry preserves
  • 6 Sprinkle the sugar mixture over each half of the dough. The filling is delicious with both types of preserves.
  • 7 Roll the dough starting at the rounded edge to the straight edge.
  • 8 Press gently
  • 9 Cut each roll into 1 inch pieces and arrange on 2 parchment papered cookie sheets
  • 10 Bake 350 degree oven for 17 minutes, or until lightly browned. The filling will spread out when baking. Let them cool completely on the parchment paper. Remove each cookie and break off the extra filling that melted.

You can add cinnamon to the recipe and omit the chocolate chips, the combinations are numerous!
