Fruited Irish Soda Bread

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 3 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 cup margarine or butter
  • 1 1/4 cups buttermilk*
  • 1 cup dried fruit bits
  • 1/4 cup candied orange peel, finely chopped

    Heat oven to 375°F. Lightly grease cookie sheet. In large bowl, combine all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, salt and cinnamon; mix well. With fork or pastry blender, cut in margarine until crumbly. Add buttermilk, fruit bits and orange peel; blend well.

    On well-floured surface, knead dough gently 1 to 2 minutes or until no longer sticky. Form dough into ball; place on greased cookie sheet. With sharp knife, cut an "X" 1/4 inch deep on top of loaf.

    Bake at 375°F. for 40 to 45 minutes or until bread is golden brown and toothpick inserted in center comes out clean. Immediately remove from cookie sheet. Serve warm or cool.

  • * To substitute for buttermilk, use 4 teaspoons vinegar or lemon juice plus milk to make 1 1/4 cups.
  • Personalize the character of this recipe by using your favorite type of dried fruit. Raisins and currants are traditional with soda bread; the candied fruit mixtures typically used for holiday fruit cakes work well, too. For a bit of exotic flair, try chopped dried papaya, mango, pineapple or star-fruit. Look for tropical dried fruits in large supermarkets, produce shops or health food stores.
  • Add 1 teaspoon caraway seed to the dough.
  • For a softer crust, brush the top of the warm loaf with melted butter.
