Ingredients

  • 1/3 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 to 1/2 teaspoon poultry seasoning
  • 3 to 3 1/2 lb. cut-up frying chicken
  • 1 cup oil or shortening

    In plastic bag, combine flour, salt, pepper and poultry seasoning. Shake chicken, a few pieces at a time, in flour mixture to coat.

    Heat oil in large skillet over medium heat; brown chicken on all sides.* Reduce heat to low; cover and simmer 30 minutes, or until chicken is fork-tender and juices run clear, removing cover last 10 minutes to crisp chicken.

  • Old-fashioned fried chicken proves that simple techniques can yield absolutely mouthwatering results. The chicken is equally good hot from the pan or cold as a picnic treat.
  • As the chicken fries, turn it gently with tongs to avoid piercing the skin. Transfer the cooked chicken to a plate lined with several layers of paper toweling to absorb excess grease.
  • Serve the chicken with corn on the cob, homemade potato salad, dinner rolls, and sliced tomatoes and cucumbers drizzled with a garlicky vinaigrette. End the meal with watermelon wedges or slices of chocolate cake.
