  • 1 In plastic bag, combine flour, salt, pepper and poultry seasoning. Shake chicken, a few pieces at a time, in flour mixture to coat.
  • 2 Heat oil in large skillet over medium heat; brown chicken on all sides.* Reduce heat to low; cover and simmer 30 minutes, or until chicken is fork-tender and juices run clear, removing cover last 10 minutes to crisp chicken.

*After browning, chicken can be placed in ungreased shallow baking pan and baked uncovered at 350°F. for about 45 minutes.

Old-fashioned fried chicken proves that simple techniques can yield absolutely mouthwatering results. The chicken is equally good hot from the pan or cold as a picnic treat.

As the chicken fries, turn it gently with tongs to avoid piercing the skin. Transfer the cooked chicken to a plate lined with several layers of paper toweling to absorb excess grease.

Serve the chicken with corn on the cob, homemade potato salad, dinner rolls, and sliced tomatoes and cucumbers drizzled with a garlicky vinaigrette. End the meal with watermelon wedges or slices of chocolate cake.
