Heat oven to 350°F. Grease bottom only of 8x4- or 9x5-inch loaf pan with shortening; lightly flour. In large bowl, stir quick bread mix, water, oil and egg 50 to 75 strokes with spoon until mix is moistened. Stir in pear and lemon peel. Pour batter into pan.
Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 15 minutes. Remove from pan. Cool completely, about 1 hour 15 minutes. Wrap tightly; store in refrigerator.
