WOW this went over well with my friends. I caught my husband finishing this up later as a mid-night snack. This was the first time I've cut up a mango and is was easier than I thought. I will use medium salsa next time to add a little more zip. I can definitely see me using this on chicken as well!

I would suggest kicking up the heat on this a bit - a nice hot chili or other pepper is a nice touch. If you briefly grill the peaches it is a nice touch. Happy spicing!!!
