Fresh Bell Pepper Pizza Sauce

Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup chopped onion
  • 2 cloves garlic, chopped
  • 4 cups coarsely chopped fresh tomatoes
  • Salt and pepper
  • 1/2 jar (7-oz size) roasted red bell peppers, chopped
  • 1/2 teaspoon crushed red pepper flakes

Steps

    In 2-quart saucepan, heat oil over medium heat. Add onion; cook about 1 minute.

    Add garlic and tomatoes. Season to taste with salt and pepper. Stir in bell pepper, roasted peppers and pepper flakes. Cook about 20 minutes, crushing tomatoes with back of wooden spoon and stirring occasionally.

    Pour sauce into blender or food processor. Cover; process with on-and-off pulses until smooth.

    Recipe can be easily doubled or tripled.

    Add a sprig of fresh rosemary to the sauce when cooking. Remove and discard the sprig prior to blending.
