cup quick-cooking or old-fashioned oats

cup packed brown sugar

cup pecans, coarsely chopped

Cake

cup granulated sugar

container (6 oz) Yoplait® Greek Fat Free honey vanilla yogurt

cup canola oil

teaspoon vanilla

eggs
1 1/2
cups all-purpose flour
1 1/2
cups whole wheat flour

teaspoons baking powder
1/2
teaspoon ground cinnamon
1/2
teaspoon salt

cups finely chopped, peeled apples (2 medium)

Directions

  • 1 Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In small bowl, mix streusel ingredients with fork until crumbly; set aside.
  • 2 In large bowl, beat sugar, yogurt, oil, vanilla and eggs with electric mixer on low speed about 30 seconds or until blended. Add all remaining ingredients except apples; beat on low speed about 1 minute or until blended. Stir in apples. Spread batter in pan. Sprinkle evenly with topping.
  • 3 Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Serve with ice cream or whipped cream, if desired.

If you don't have whole wheat flour on hand, you can use all-purpose flour.

If you'd like to increase fiber, don't peel the apples.

Very easy to make and delicious. I made a few changes because I had the raisins on hand. I added raisins I soaked for a few mins. in hot water and rum. I also used my go to strudel recipe that uses butter instead of oil. So good warm with french vanilla ice cream.
