This is my go-to recipe when I want to make French onion soup. It's quick, easy and delicious. I use sourdough bread instead of French, and I usually use a 48 oz. can of beef broth (six cups instead of five), but other than that, I follow the recipe as written.

I have made this soup a couple of times already. The first time, I did it without the bread. It was great!! The 2nd time I made it with the bread, it was even GREATER!! My roommate asked if there was any more and sadly I had to say, no there is not. This may be recipe for 2, but I think this is a great soup that can be doubled or tripled for leftovers!!
