Ingredients

loaf (12 inch) French bread, cut in half lengthwise

cup garlic-and-herbs spreadable cheese (from 4- to 6.5-oz container)

cup thinly sliced mushrooms
1
cup thin strips red, green or yellow bell pepper
1/2
cup julienne (matchstick-cut) zucchini (2x1/4x1/4 inch)
1/3
cup sliced ripe olives
Olive oil cooking spray or regular cooking spray

teaspoon Italian seasoning
1/2
cup shredded reduced-fat mozzarella cheese (2 oz)

Directions

  1. 1 Heat oven to 450°F. Line 15x10x1-inch pan with foil. Place bread halves, cut side up, in pan.
  2. 2 Spread spreadable cheese evenly over each bread half. Arrange mushrooms, bell pepper, zucchini and olives evenly over top. Spray gently with cooking spray. Sprinkle with Italian seasoning.
  3. 3 Bake about 15 minutes or just until vegetables begin to brown. Reduce oven temperature to 425°F. Sprinkle cheese over pizza.
  4. 4 Bake at 425°F about 5 minutes longer or until cheese is melted. Cut each bread half in half crosswise. Wrap each serving securely with foil; take with you for an on-the-go dinner.
