Flank Steak Fajitas

Ingredients

Fajitas

lb beef flank or skirt steak

tablespoons Old El Paso™ taco seasoning mix (from 1-oz package)

tablespoon packed brown sugar
2
tablespoons lime juice
2
teaspoons red pepper sauce
1
red bell pepper, cut into strips
1
large onion, sliced

Old El Paso™ flour tortillas for burritos (8 inch; from 11.5-oz package), heated as directed on package

Toppings, if desired

Shredded lettuce
Shredded Cheddar or Monterey Jack cheese
Old El Paso™ Thick 'n Chunky salsa
Sour cream
  • 1 Place beef in resealable food-storage plastic bag. In small bowl, combine taco seasoning mix, brown sugar, lime juice and pepper sauce. Pour over beef; seal bag. Let stand 15 minutes.
  • 2 Spray grill pan with cooking spray; heat over medium-high heat. Remove beef from marinade. Place beef in pan. Cook 8 to 10 minutes, turning once, until desired doneness. Remove from pan to cutting board; let stand 5 minutes.
  • 3 Meanwhile, in grill pan, cook bell pepper and onion 5 minutes, stirring occasionally, until vegetables are tender and browned.
  • 4 Cut steak across grain into thin slices. To serve, place beef and vegetables evenly down center of warmed tortillas. Add desired toppings. Roll tortilla around filling.
