can (8 oz) Pillsbury® refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
1/4
lb thinly sliced corned beef
1/2
cup finely shredded Swiss cheese (2 oz)
1/3
cup sauerkraut, well drained

Dipping Sauce

1/2
cup Thousand Island dressing
1
tablespoon milk

  • 1 Heat oven to 375°F.
  • 2 If using crescent rolls: Unroll dough into 2 long rectangles. Press each to form 12-inch-long rectangle; press perforations to seal. If using dough sheet: Unroll dough; cut into 2 long rectangles. Press each to form 12-inch-long rectangle.
  • 3 Layer half of corned beef on each dough rectangle, cutting to fit if necessary. Top each with cheese and sauerkraut. Starting at long side, roll up each tightly; seal long edges. Place, seam side down, on ungreased cookie sheet; tuck edges under.
  • 4 Bake 12 to 14 minutes or until golden brown.
  • 5 Meanwhile, in small bowl, mix dipping sauce ingredients.
  • 6 To serve, cut warm rolls into 1-inch slices; place on serving platter. Serve with dipping sauce.

Lovely at most any party. They go fast, make two batches. I made Flaky Rachel Bites instead for a little more zing. To make these substitute Russian dressing for the Thousand Island stuff. ..

This snack was a bit challenging to work with but they were a huge success and hit this year at our Christmas party..

Big hit last year for the holidays. I actually used Turkey Pastrami instead of Corned beef due to dietary restrictions, but same great flavor.

"Flaky Reuben Bites" are a delicious appetizer for any party. Experiment with the 1,000 Island Dressing - I enjoy it to be mixed with Sour Cream, rather than just thinning it with water.

The flavor was good, but I had to bake them a LOT longer than the instructions said, and even then, the middle dough was gooey and raw. I like the taste, so I think next time I'll try modifying it into little individual "pockets" rather than the roll. Good idea, not so great execution.
