Cooking spray

cup chopped cooked chicken

cup thin red bell pepper strips

cup Old El Paso® Thick 'n Chunky salsa

Directions

  • 1 Heat oven to 450°F. Line 15x10x1-inch pan with foil. Spray both sides of each tortilla lightly with cooking spray. Place 2 tortillas on foil-lined pan. Sprinkle each with half of the chicken, bell pepper strips, cheese and green onion. Top with remaining 2 tortillas.
  • 2 Bake 3 to 5 minutes or until light brown and crisp. Cut into wedges; serve with salsa.

followed she37blg.revision recipe. loved it. the only thing I'd add is to not bake it at the bottom rack setting. I would move it up farther from the heat as the bottom of my quesadilla's burned. They only need about 7-8 minutes in a preheated 450 degree oven. Also the Pam cooking spray tends to 'smoke' in the oven. Use your vent fan or it may set off your smoke alarms.

Basic idea is great and using seperate tortillas rather than folding one is fantastic. Two tortillas will fit onto an 11 x 17 inch baking pan nicely. After cooked, they can be cut into quarters making 8 servings per tortilla. I changed the recipe to fit my needs and taste: 10 inch tortillas rather than 8 inch, 2-6 oz pkgs Oscar Mayer Grilled Chicken Breast Strips (diced), equal amount of red and green pepper strips (about 1/2 cup or more), 1/2 large red onion (diced), 1 tsp. taco seasoning (more or less to taste), and 4 Cheese Mexican blend, sour cream and salsa as toppings. Cook the peppers and onions for about 5 minutes in a large skillet with a tsp. of oil. Add the diced chicken and taco seasoning, tossing well to blend; and cooked for several more minutes until veggies are tender and chicken thoroughly heated. Sprinkle mixture evenly between two tortillas (be sure to spray each side with cooking spray for all tortillas), top with grated Mexican blend cheese, and the other two tortillas. Bake 7-8 minutes or until light brown & crisp. Cut into wedges, serve with sour cream and salsa.
