Basic idea is great and using seperate tortillas rather than folding one is fantastic. Two tortillas will fit onto an 11 x 17 inch baking pan nicely. After cooked, they can be cut into quarters making 8 servings per tortilla.
I changed the recipe to fit my needs and taste: 10 inch tortillas rather than 8 inch, 2-6 oz pkgs Oscar Mayer Grilled Chicken Breast Strips (diced), equal amount of red and green pepper strips (about 1/2 cup or more), 1/2 large red onion (diced), 1 tsp. taco seasoning (more or less to taste), and 4 Cheese Mexican blend, sour cream and salsa as toppings.
Cook the peppers and onions for about 5 minutes in a large skillet with a tsp. of oil. Add the diced chicken and taco seasoning, tossing well to blend; and cooked for several more minutes until veggies are tender and chicken thoroughly heated.
Sprinkle mixture evenly between two tortillas (be sure to spray each side with cooking spray for all tortillas), top with grated Mexican blend cheese, and the other two tortillas.
Bake 7-8 minutes or until light brown & crisp. Cut into wedges, serve with sour cream and salsa.
