EXPERT TIPS

Expert Tips

To broil steaks, place on broiler pan; broil with tops 4 to 6 inches from heat, using times in recipe as a guide, turning once.

An instant-read thermometer can be used to determine steak doneness. Insert the thermometer horizontally into the steak. It should read 145°F for medium-rare, 160°F for medium or 170°F for well done.

Keep in mind that a 3-oz serving of lean meat is about the size of a fist or computer mouse.

Tender, juicy and delicious! Top sirloin is one of my favorite beef cuts - and the coffee rub is a terrific flavor compliment! My only suggestion is to grill over medium heat (not medium high) - and pull the steak at 145°F for perfect medium rare doneness. I LOVE BEEF!
