And, for those who don't have a slow cooker, this can be made in about 30 minutes on the stovetop. Yum!

this is a great tasting soup, good kick. Here's a tip, you can use frozen chicken breasts, no need to thaw and they cook up in the same amount of time.

Very good - I also added a can of Fiesta Nacho Cheese Soup to give it more of a creamy texture - and can corn drained, instead of frozen, is just as good :) If you want something a little quicker, 2 cans of white chicken works well in a pinch. Definitely add the sour cream, crushed chips and sour cream! Yummy

I made this tonight for 7 (adults & teens) after reading the reviews, I included most suggestions (2cans enchilada sauce, 1 can each black & pinto beans, added fresh chopped carrots, zucchini, tomatos along w/ the other ingredients.. I let each person customize w/ toppings of: sour cream, avocado, cheddar cheese, chips, onions, cilantro). I also baked corn muffins which complimented the soup very nicely. Everyone Loved this meal! 5 Stars

I wasn't in love with this the first time I made it. I made a few changes and made it again. I used 2 cans of enchilada sauce and diced tomatoes with green chilies along with skinless boneless chicken breasts. I didn't use beans because I am not a fan. My guinea pig was quite happy with it.

This soup is awesome!! I did make a few changes because of what I had on hand. I used frozen chicken breasts and pinto beans instead of black beans. I also added fresh yellow squash & zucchini- SOOOOO GOOOD!

I too used 2 cans of hot enchilada sauce, and served it with condiments like chopped green onions, cilantro, avacado cubes,and finished with a dollop of sour cream. Was wonderful.

I used shredded pork instead of chicken and it was wonderful! Even my picky son loved it! Will definitely make this one again. Super easy recipe.
