Great, very easy soup! We loved it. We only used cheese and no onions as a garnish. I used one can of mild and one can of medium enchilada sauce. This was plenty spicy. We will keep this as a go to recipe for the colder weather.

my family just LOVES this soup! It is a most requested item. I am able to reduce the sodium by using unsalted chicken stock, REAL chicken, NO additional salt, any brand of enchilada sauce that has the least amount of sodium, and use the tiny fideo vermicelli as it really makes this dish super easy. Haven't tried it with rice yet but that sounds good. We have used many different types of cheeses even pepper-jack. We're not big on onions so we leave them off. This is a great recipe!

sorry, this isn't a review, but there seems to be a lot of sodium in this soup and was wondering how to reduce that quantity by finding out where it all came from. I'm guessing it's because of all the canned items.

Made without the vermicelli to make more diet friendly. Very tasty and better than other recipes I have tried. The creamed corn makes a big difference. Topped it with cilantro. Delicious!

Instead of using the vermicelli I used 1 cup of minute rice. Otherwise I followed the recipe exactly. We love this soup!

Very good! There are only two of us, so I halfed all the items, except the chicken (double that to 2 cans). I also added a can of black beans, a can of mexicorn and a 1/4t of chili powder. Added 2 tablespoon of corn starch to the chicken stock before adding anything else to it, we like things thinker. It all came together more like a chili! Served with cheese, avocado and a little sour cream on top. Tortilla chips on the side for dipping. My hubby loved it! This will become a normal during the winter months for sure!

This was very good and very quick and easy to make. I love making soup on rainy days and this fit the bill perfectly. I did use fat free broth and topped it off with reduced fat mexican cheese blend and fat free sour cream to reduce the calories and fat content.

We love this recipe. Every time I make it my husband says it is the best soup he's ever tasted. I also add two cans of Mexicorn and a can of black beans.

I make this soup very often and it never lasts very long. As soon as other people find out I made it, they invite themselves over for dinner! My only suggestion is to add some cilantro and cumin to give it a little bit more of a "mexican" flavor. It really adds to the overall taste of the dish. I also use the Mexican shredded cheese instead of the suggested cheese.
