Empanada Grande

Bite into a wedge of this flaky Latin American pastry, made easy with frozen peas and hash browns and lots of smoky sausage.

With sausage and hash browns, I'm more inclined to have scrambled eggs and cheese than peas. I'd turn these into breakfast empanadas and love every bite!

This is an excellent recipe. However, I used turkey sausage, well drained. So it turned out a bit dry. Next time I will add a little cheese or sour cream for moisture. I will use this recipe again and again.

I love this recipe. I have adapted it though for my vegetarian tastes. I use some soy crumbles and sometimes will use soy chorizo. it's easy to fix and I can't get enough. anyone that I have made it for agrees and often asks for the recipe.

I used spicy chorizo and instead of the hash browns I used fresh potato diced into one inch squares. I had to bake it a bit longer because ofthe fresh potatoes but it made all the difference in making this a really tasty dish. I'll deffinatelymbe making it again.
