Ingredients

cup sugar

cup dairy eggnog (not canned)

cup margarine or butter, melted

teaspoons rum extract

teaspoon vanilla
2 1/4
cups all-purpose flour

teaspoons baking powder

teaspoon salt
1/4
teaspoon nutmeg

Directions

  1. 1 Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan.* Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla; blend well.
  2. 2 Add flour, baking powder, salt and nutmeg; stir just until dry ingredients are moistened. Pour into greased pan.
  3. 3 Bake at 350°F. for 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Cool 1 hour or until completely cooled. Wrap tightly and store in refrigerator.
