cups fat-free cholesterol-free egg product (from two 8-oz. cartons) or 6 eggs, lightly beaten

teaspoon pepper

teaspoon canola or soybean oil

cup fat-free cream cheese (from 8-oz container)

cup no-sugar-added all-fruit strawberry spread

fat-free flour tortillas (8 to 10 inch)

lb sliced cooked reduced-fat ham (from deli)

Directions

  1. 1 Heat oven to 400°F. In small bowl, mix egg product and pepper until well blended. In 8-inch nonstick skillet, heat oil over medium heat. Reduce heat to medium-low. Pour egg product mixture into skillet; cook, stirring constantly, until set but still moist. Remove from heat.
  2. 2 In another small bowl, mix cream cheese and strawberry spread (mixture will be lumpy). Spread 2 tablespoons mixture over each tortilla.
  3. 3 Down center 1/3 of each tortilla, place 1/4 of ham slices and scrambled egg product. Fold sides of tortillas over filling. Place folded side down on ungreased cookie sheet.
  4. 4 Bake 3 to 5 minutes or until thoroughly heated.
