Enjoy this delicious ground beef dinner made using potatoes, cheese and salsa that’s ready in 30 minutes – perfect for Mexican cuisine.

Ingredients

lb. lean ground beef

tablespoon oil
3
cups frozen potatoes O'Brien with onions and peppers (from 24-oz. pkg.)
1
cup chunky-style salsa
2
teaspoons chili powder, if desired
4
oz. (1 cup) shredded colby-Monterey Jack cheese blend

Steps

  • 1 In large nonstick skillet, brown ground beef until thoroughly cooked. Remove ground beef from skillet; cover to keep warm. Discard drippings.
  • 2 In same skillet, heat oil over medium heat until hot. Add potatoes; cook and stir 8 to 10 minutes or until browned.
  • 3 Stir in salsa, chili powder and ground beef. Cook 5 to 8 minutes or until thoroughly heated, stirring occasionally.
  • 4 Sprinkle with cheese. Cover; cook 2 to 4 minutes or until cheese is melted.
