I thought this soup was simple but good. I added some ground beef (1/2#) and think next time I might add some spaghetti sauce to make the broth more flavorful and use kidney beans for color variety. It was good served with Parmesan cheese on top.

Well, I think this recipe out does the Olive Garden in our area. It tasted like a high school cooking class attempt. This recipe was great and very workable. will make over and over.

Yes, you can get the Olive Garden recipe; however it makes about 9 quarts. I don't need that much. This recipe is basic, but good. One of the great things about pasta e fagioli is that you can do almost anything with it. For a little stronger taste, I add a teaspoon of chicken or vegetable boullion and a large pinch of dried chilies. Sometimes I add a little fresh spinach. Or I'll puree the tomatoes for a smoother base, or I'll add fresh basil and oregano at the last minute instead of dried...you get the idea. Try this soup--it's excellent cold-weather comfort food, it's always a family pleaser, and you can always adjust it to suit your tastes.

This recipe was just ok. If you go to Olive Garden's website, and click on recipes, they give their recipe for pasta e fagioli, and it is fantastic!
