Easy Hamburger Stew

Ingredients

  • 1 lb. lean ground beef
  • 1 medium onion, chopped
  • 2 cups frozen seasoned chunky-style hash-brown potatoes (from 28-oz. pkg.)
  • 2 cups frozen cut green beans
  • 1 (11-oz.) can whole kernel corn, red and green peppers
  • 1 (10 3/4-oz.) can condensed tomato soup
  • 1 (14-oz.) can ready-to-serve beef broth
  • 1 teaspoon garlic-pepper blend

    In large saucepan or Dutch oven, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.

    Add all remaining ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer 10 minutes or until thoroughly heated, stirring occasionally.

  • If preferred, substitute cubed frozen hash-brown potatoes for the seasoned chunky-style frozen hash-brown potatoes in this hamburger stew recipe.
  • Short on prep time? Chop several onions at once ahead of time in the food processor, separate the chopped onions into 1/2-cup portions and freeze them for future use. In this recipe for Easy Hamburger Stew, you can cook the frozen chopped onion directly with the ground beef.
  • Pass around grated or shredded Parmesan cheese to sprinkle over the steaming bowls of stew.
