cup fat-free egg product or 2 eggs

Directions

  • 1 Heat oven to 400°F. Lightly spray 9x5-inch (1 1/2-quart) glass loaf dish with cooking spray. Sprinkle zucchini, tomato, onion and cheese in dish.
  • 2 In medium bowl, stir remaining ingredients until blended. Pour over vegetables and cheese.
  • 3 Bake 30 to 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes before serving.

yes, baking mix = Bisquick or similar product. They have several recipes like this on the Bisquick website.

I was all set to try this recipe -- until I read the ingredient "baking mix" does that mean something like Bisquick?
