I was skeptical, but this turned out much better than I expected. I was pleasantly surprised! Very easy to assemble.

This is a long standing favorite! Have made it many times. Easy and delicious. I also add jalapeno's, red peppers, fresh tomatoes, cilantro, refried beans etc. based on what I have in the pantry or fridge. Great topped with sourcream and or guacamole.

This was the very first time I had ever made lasagna and I found it fairly simple. I followed the recipe, but I added more cheese, and salsa. Next time I will use hot salsa and hot peppers.

Easy and good even for meat lovers. Will keep on hand for a vegetarian meal. Very easy and inexpensive.

This was absolutely delicious!! I added ground beef to tomato mixture and also topped with sour cream after baking. The whole family loved it!!

I sell lunches at work, so I bulked this out a bit to make 6 healthy servings. 2 cans beans, a whole onion and green pepper, 1 1/2 cup medium salsa, reverse the chili powder and the cumin, and double the cheddar cheese. I layered it like a lasagna, noodles, sauce, cheddar, ricotta, with the ricotta on the bottom and middle only. I also cooked it uncovered 15 minutes after the 45 covered. It was fantastic, all of my coworkers that like Mexican food loved it. It will be great for the next time I have Vegetarian friends over, too.
