I added a dash or two of cinnamon... Funny, I heard every excuse from my boys as to why they couldn't eat their spinach (including the 7 yr. old who informed me that because I was older, I didn't have as many taste buds as he, being the youngest, and therefore couldn't possibly know just how horrible the spinach tasted). The foldover, however, was consumed without objection.

This is so easy and good to eat. I live alone and a full size pie is just too much. This gives me a dessert that I can have over a couple of days and not feel guilty about eating it all. I also added cinnamon and nutmeg. I have made it for company and everyone likes it.

I added a tablespoon of good quality basalmic vinegar to the apple compote mixture before adding the flour thickener and used some wine we had in the fridge, I think it was a fruity sauvignon blanc, in place of the water. I also added cinnamon to the apples. The sweet tang with the crust and simmered apples turned out to be amazing. Good thing I made a double batch because it was gone in an hour.

I've made this 4 times now. It's simple, quick and pretty much fool proof. I did increase the apples to 2 cups, omitted the vanilla and added 1/4 t. of cinnamon with a dash of nutmeg. I also sprinkled a little bit of cinnamon & sugar on top of crust. In one word "DELICIOUS". Served warm with a scoop of ice cream or take on the way out the door to work it's great.

My mom always made a great apple pie;however, I was thinking of making this for Thanksgiving. Would I have to make this a few times in order to accomodate 10 people?
