Easter Basket Cookies

You can bake these pretty little baskets to place at each setting on the Easter table. They're easier than you'd think because they start with refrigerated dough!

Is anyone else having a problem w/ the edges of the cookies turning too brown and the middle not cooking all the way? I've reduced the cooking temp and tried little foil edge covers but I'm not having alot of luck. I've done both the mini and regular size cups. I FINALLY got it to come out the correct shape but it is getting too brown, it gets too crispy when cooled... HELP.

Doris B SusieQ5155 U hit the nail right on the head with your comments. Target has Warheads Sour twists perfect for the handle for the basket. My Daughter is a dancer at the Rio in Vegas. I am making them for her to take in Easter Sunday. If a person has to work on Easter they should have a treat and these cookies will be a big hit.

I would love to make but the directions are not clear. Where is the ribbon and frosting in the picture.Frost where on top? Where is the ribbon. Directions or picture have to define better. I would like to make for Easter.

I used thin licorice ropes for the handles...they were cute!!

I made these in the late 80's and they were always a hit. I had lost the book/magazine with the recipe when I moved and couldn't remember the exact amounts, instructions, etc. I can't recall what was used for the handles, but I'm pretty sure it wasn't pipe cleaner. I'm so happy I found it again.

I plan to try this soon, but heres an idea, why not use those gummy sour patch straws instead of pipe cleaners? you could put larger clumps of icing on the sides for the straw stick to, and then then entire thing would be edible!

You frost the top of the cookie basket to make the coconut stick to the basket.
