This is a fast evening supper. You can prepare the eggs earlier in the day and prep the gravvy before the meal. I have added deli corned beef or chipped beef to the gravvy which makes it more of a meal. Served with a salad, this is a quick, tasty, and (made with skim milk) rather light meal. (I have also poached eggs instead of boiling them. My husband likes the poached egg better than the boiled.) At our next brunch for friends, I plan to have an area where friends will be able to assemble their own.
