roll (30 oz) Pillsbury® refrigerated peppermint cookies
3
cups white vanilla baking chips or semisweet chocolate chips (18 oz)
16
round hard peppermint candies, crushed (1/2 cup)

  • 1 Heat oven to 350°F. In bowl, break up cookie dough. Stir or knead in 1/2 cup all-purpose flour until well blended. Shape dough into 72 (1-inch) balls. On ungreased cookie sheets, place balls 2 inches apart. Bake 10 to 14 minutes or until edges are golden brown. Cool completely.
  • 2 In microwavable bowl, microwave chips and 2 tablespoons vegetable oil uncovered on Medium (50%) 2 to 3 minutes, stirring once halfway through microwaving, until melted. Stir until smooth.
  • 3 Dip half of each cookie into melted mixture, allowing excess to drip off; place on waxed or cooking parchment paper-lined cookie sheets. Sprinkle each with slightly less than 1/2 teaspoon crushed candy. Let stand until set.

First, I don't understand reviewers who "review" the recipe before even making it. Weird. Second, I have made these for several years and they are delicious. They are on my annual cookie list now. I add a couple crushed candy canes to the dough mixture. Third, I don't understand some of the reviews here. Someone said they used a 2" diameter scoop and didn't get near 72 cookies. The recipe clearly calls for 1" balls so of course you wouldn't get anywhere near 72. Do the math. I just made them again and got 69 cookies. I don't understand the people who say this isn't easy. We made these yesterday and had so much fun. Even my Dad got into the dipping them in the white chocolate. I did get 72 cookies using a teaspoon cookie scoop. They set very quickly. I think they looked like a very fancy cookie but were super easy to make. The peppermint flavor was mild enough that everyone enjoyed. I think Santa was very pleased.

Not a bad recipie. The taste is average. They look festive. I got pretty close to the 72 cookie yield. I used both white & semi-sweet chips. The white set no problem, but the semi sweet had to go in the fridge over night to set.

I like this recipe very much but as several others have stated it doesn't even come close to a yield of 72. I use candy cane sprinkles instead of crushed candy canes.

I just made these and have to agree with the previous review. I used a cookie scoop (2" diameter cookie) and got 52 cookies. I also had to "ice" them rather than dip them in the chocolate. Taste great ( I love peppermint), just not as easy to make as it sounds. Suggestions on dipping would be welcomed!
