Double Date Bars

Ingredients

Filling

  • 1 (8-oz.) pkg. (1 1/2 cups) chopped pitted dates
  • 1/2 cup raisins
  • 1/4 cup sugar
  • 1 cup water
  • 1 teaspoon vanilla

Base

  • 1 (1 lb. 0.6-oz.) pkg. date quick bread mix
  • 1/2 cup margarine or butter, softened
  • 1/2 cup chopped walnuts
  • 1/4 cup quick-cooking rolled oats

    Heat oven to 375°F. Grease 13x9-inch pan.

    In medium saucepan, combine all filling ingredients except vanilla; mix well. Bring to a boil. Reduce heat to low; cook 10 minutes or until thickened, stirring occasionally. Remove from heat; stir in vanilla.

    Meanwhile, place quick bread mix in large bowl. With pastry blender or fork, cut in margarine until crumbly. Stir in walnuts. Reserve 1 cup mixture for topping. Press remaining mixture in bottom of greased pan.

    Carefully spread filling over base. In small bowl, combine reserved 1 cup of base mixture and oats; mix well. Sprinkle over filling.

    Bake at 375°F. for 18 to 23 minutes or until top is golden brown. Cool 30 minutes or until completely cooled. Cut into bars.

  • If you can't find packaged chopped dates, use 8 ounces of pitted whole dates and cut them yourself. Dates are sticky, so lightly coat the knife with nonstick cooking spray. Or try freezing the dates for 1 to 2 hours, and using kitchen scissors dipped in water to easily snip them. Eight ounces of pitted dates yield about 1 1/2 cups of chopped dates. One 2-ounce bag of walnuts yields about 1/2 cup of chopped walnuts.
  • To dress up these bars for dessert, cut them into larger squares. Place the bars on individual plates and top each with a dollop of whipped cream and a toasted walnut half.
