Dilly Smoked Salmonwiches

Ingredients

  • 2 (3-oz.) pkg. cream cheese, softened
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon grated lemon peel
  • 4 slices pumpernickel rye bread
  • 16 slices cucumber
  • 1/2 lb. thinly sliced smoked salmon
  • Fresh dill, if desired

    In small bowl, combine cream cheese, chopped dill and lemon peel; mix well.
  • 2
    Spread cream cheese mixture evenly on slices of bread. Layer with cucumber slices and salmon. Garnish with fresh dill.

  • One-half teaspoon of dried dill weed can be used in place of the fresh dill.
  • These open-faced sandwiches make great appetizers. Prepare Dilly Smoked Salmon Snacks on 16 slices of cocktail rye slices, place them on a baking sheet and bake them in a 350°F. oven for 5 minutes or until they are crisp, turning once.
