Dijon Cranberry Pork Sandwiches

cup unseasoned bread crumbs

tablespoons pecans or walnuts, ground or finely chopped

(4-oz.) boneless pork loin chops, butterflied*

tablespoons Dijon mustard

slices pumpernickel bread, toasted

cup purchased cranberry relish

  • 1 In small shallow bowl, combine bread crumbs and pecans; mix well. Spread both sides of pork chops with half of the mustard; coat with crumb mixture.
  • 2 Spray large nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Add pork chops; cook 4 to 6 minutes or until no longer pink in center, turning once.
  • 3 Spread remaining half of mustard on 4 slices of toast. Top with pork chops, cranberry relish and remaining toast slices.

* To butterfly pork chops, starting at long side of chop, cut chop in half horizontally, cutting almost but not completely through. Open chop and flatten to resemble butterfly shape.
