Delicate Pear Muffins

Serve these hot from the oven and enjoy the leftovers later. They´re great eating either way.

Ingredients

Muffins

cups All Purpose Flour
1/3
cup sugar

teaspoons baking powder
1/4
teaspoon salt
1/4
teaspoon nutmeg

cups (2 medium) cubed peeled pears
1/2
cup skim milk

tablespoons oil
1
egg

Topping

tablespoons sugar
1
teaspoon finely grated lemon peel
  • 1 Heat oven to 400°F. Line 12 muffin cups with paper baking cups and spray lightly with nonstick cooking spray, or spray 12 muffin cups.
  • 2 Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, 1/3 cup sugar, baking powder, salt and nutmeg; mix well. Add pears; toss to coat.
  • 3 In small bowl, combine milk, oil and egg; beat well. Add to dry ingredients; stir just until dry ingredients are moistened. DO NOT OVER MIX. Divide batter evenly among paper-lined muffin cups.
  • 4 In small bowl, combine topping ingredients; mix well. Sprinkle over batter in cups.
  • 5 Bake at 400°F. for 15 to 20 minutes or until toothpick inserted in center comes out clean and edges are golden brown. Serve warm.
