Ingredients

cups uncooked couscous

cup orange juice

cup honey

teaspoons cornstarch

teaspoon ginger

teaspoon curry powder

teaspoon paprika

teaspoon coarse ground black pepper

tablespoons oil

lb. chicken breast tenders
1
medium green bell pepper, thinly sliced
1
small onion, cut into thin wedges
2
peaches, peeled, thinly sliced

Directions

  1. 1 Cook couscous as directed on package. Set aside.
  2. 2 In small bowl, combine orange juice, honey, cornstarch, ginger, curry powder, paprika and pepper; blend well. Set aside.
  3. 3 Heat oil in large skillet or wok over medium-high heat until hot. Add chicken; cook 4 to 6 minutes or until browned, stir occasionally.
  4. 4 Add bell pepper and onion; cook and stir 4 to 5 minutes or until chicken is no longer pink and vegetables are crisp-tender.
  5. 5 Stir orange juice mixture until smooth. Add orange juice mixture and peaches to skillet; cook and stir 2 to 3 minutes or until sauce is bubbly and thickened. Serve over couscous.
