Curried Chicken and Grape Salad

This deli favorite is easy to make; just add curry and lemon juice to mayonnaise, then blend with cooked chicken, grapes, and crunchy celery.

Ingredients

Dressing

cup mayonnaise or salad dressing

Salad

cups diced deli rotisserie chicken (from 2- to 2 1/2-lb chicken)

cup thinly sliced celery

cup seedless red grapes, halved

tablespoons slivered almonds, toasted

  • 1 In large bowl, stir dressing ingredients until well mixed.
  • 2 Fold in chicken, celery and grapes. Sprinkle with almonds.

You can use cooked chicken from the deli, cut into cubes, or frozen (thawed) diced cooked chicken instead of the rotisserie chicken.

First, for those of you who are questioning the number of servings this makes, it states that it makes 5 servings. For me, this is YUM. I doubt I will ever make another form of chicken salad. I am currently looking for the hotter curry powder as I like a little heat in my food. Also, when I tried the recipe, I did not have any grapes so I just cubed up some canned pear halves and love it that way. It gave a slight touch of sweetness (not overpowering) and it was an easy substitute. Again, YUM-open face on small bread slices ( hmm, think crostini next time or on greens).

Definitely the best chicken salad I have ever made! I will plan to double it next time. Fabulous recipe!

Am I missing where it says how many servings it makes? What's the point of giving the nutritional content per serving if you don't say how many there are in the recipe? Other than feeling like I probably ate 3 servings, this was really good.

This was both delicious and easy. My kids liked it but wanted it as a sandwich. When they tried bread it was to messy so the next time they used a flat bread like tortillas and rolled it up to make it easier to eat. I enjoyed it on a bed of butter lettuce. I ran out of slivered almonds so I added some pine nuts which was a good substitute.
