Cucumber and Tomato Salad Caprese

Double your pleasure with a summer classic salad when you use two colorful tomato varieties.

large red tomato, sliced

medium cucumber, sliced

oz. fresh mozzarella cheese, sliced

tablespoons extra-virgin olive oil

tablespoon lemon juice

teaspoon freshly ground black pepper

cup coarsely chopped fresh basil or lemon basil
  • 1 On large platter, arrange tomato, cucumber and mozzarella slices overlapping in a single layer.
  • 2 In small bowl, combine oil, lemon juice, salt and pepper; mix well. Drizzle over salad. Sprinkle with basil.
