oz frozen cooked deveined peeled shrimp, tail shells removed, thawed, drained and coarsely chopped

cups coleslaw mix (shredded cabbage and carrots)
1/2
cup Yoplait® Greek plain yogurt (from 6-oz container)

medium green onion, sliced (1/4 cup)

whole-wheat or white pita breads (6 or 7 inch), cut in half to form pockets

leaves red leaf lettuce

thin slices tomato, halved

  • 1 In medium bowl, gently mix shrimp, coleslaw mix, yogurt and onions.
  • 2 Fill each pita bread half with 1 lettuce leaf, 1 halved tomato slice and 1/4 cup shrimp mixture. Wrap 2 sandwiches together securely with foil or plastic wrap; take with you for an on-the-go dinner.

I forgot to add - the ingredient list didn't list DILL, but it's mentioned in the instructions. I used 1 tbsp. fresh dill.

This was a nice, quick recipe. I had it for lunch a couple of days and was very pleased. I made one substitution - I don't like mayo so I used half greek yogurt & half sour cream.
