Heat oven to 325°F. In shallow roasting pan, place ham. Insert ovenproof meat thermometer so tip is in thickest part of ham.
Bake uncovered about 1 hour 40 minutes or until thermometer reads 140°F. Cool ham 15 to 20 minutes. Spray 15x10x1-inch pan with cooking spray. Place ham on pan. Spread preserves over ham.
Separate dough into 2 large rectangles; firmly press perforations to seal. Overlap long sides of rectangles; roll out to form 13x9-inch rectangle. Place rectangle over ham, covering top and sides. Trim excess dough from corners of rectangle. With sharp knife, cut corners of dough into small petals; arrange as flowers on top of ham.
Increase oven temperature to 375°F. Bake 13 to 15 minutes or until golden brown. To garnish, cut cherries and arrange as centers of flowers on top of ham.
