This was pretty tasty! I would definitely make it again. The use of rice instead of pasta was a nice unique change. If you are afraid to use the hot sauce because you think it will be too spicy, don't be. I used the hot sauce AND 2 tsp. of buffalo sauce, and it lent a good flavor to the dish but it was definitely not spicy. Also the amount of rice called for is not nearly enough. Double it, or it won't even cover the surface of the pan. The egg was no where near set after 15-20 minutes, and I ended up putting the pan under the over broiler to finish it off.

Creole Frittata is great to serve for brunches, and it''s a hit with the older and younger guests. We have it regularly at our house as it''s as good leftover as it is served fresh.
