Creamy Basil-Chicken Pasta

oz. (2 1/2 cups) uncooked rainbow rotini (spiral pasta)

cups Green Giant® frozen broccoli
1
cup nonfat sour cream
2
teaspoons all-purpose flour
1/2
cup skim milk
1 1/2
cups diced cooked chicken breast
3/4
teaspoon dried basil leaves
1
(4.5-oz.) jar sliced mushrooms, drained
4
tablespoons grated Parmesan cheese

Directions

  • 1 In large saucepan or Dutch oven, cook rotini to desired doneness as directed on package, adding broccoli during last 5 minutes of cooking time.
  • 2 Meanwhile, in medium saucepan, combine sour cream and flour; blend well. Stir in milk. Cook over medium heat, stirring constantly, until hot but not boiling. Stir in chicken, basil, mushrooms and 3 tablespoons of the cheese. Cook until thoroughly heated.
  • 3 Drain rotini and broccoli; return to saucepan. Add chicken mixture; toss to coat. Place mixture in serving dish or on serving platter; sprinkle with remaining 1 tablespoon cheese.

Expert Tips

When a recipe calls for diagonally sliced chicken, put it in the freezer for 20 to 30 minutes first. The meat will firm up just enough to make diagnoal slicing easier.

Great dinner. I would doubled the parm and basil, also add garlic. For the leftovers I added a box of mac and cheese. Next time I make this I think I will start with mac and cheese and add the sauce next and bypass the other pasta. Cooking the broc. with the mac noodles instead

this was pretty bland. I seasoned the chicken with garlic powder and pepper and it was still bland. I didn't add the mushrooms because my husband and kids don't like them. I think that might have helped though. I'm not sure I would make this again.

We had this tonight for dinner and it was really good. I loved how it was easy to prepare and fast. Around our house that's really important. It was a great meal to prepare with left over chicken I made the day before. I would definitely make this again.

This was very quick and easy to make, and my family loved it. I did add garlic while cooking the chicken, and a little bit of shredded italian cheeses when finished.

I loved this recipe! It was easy, tasty, and low fat. Next time I will add garlic, a pinch of salt, and red pepper!
