Creamcheese Cucumbers

Beginners summer salad for family picnics or neighborhood summer events for a busy lifestyle. Very sweet and crisp with no sugar added. Also can be adapted very easily for personal tastes.

Ingredients

Peeled and sliced cucumbers(3 to 6) depending on the event
Peeled and sliced onion rings(1/2 to 1) (red or sweet yellow) cut in half if desired.
Soft flavored or unflavored cream cheese(8 oz for small up to 16oz for large))
Sea salt(enough to light cover with one stir)

  • 1 Add soft cream cheese to double boiler on the stove(1 small pan inside larger pan with water) on medium heat.
  • 2 While the cream cheese is softening add cucumbers and onions to large bowl and add sea salt to cover. Stir and repeat process.
  • 3 Stir cream cheese to very soft consistency in double boiler. Remove and stir into the prepared cucumber and onions. After coating the cucumbers cover and place in refrigerator.
  • 4 At about 4 hours check to see if a creamy sauce is forming. If not add some more salt and cover.
  • 5 Before serving or transporting stir and blend with a light coating of black pepper.

Even with the softening the cream cheese can clump up. As long as you have a light coating the sauce will work. The salt draws moisture from the cucumbers and onions for the sauce.
