Wash and drain strawberries; remove stems if desired. Stand strawberries up on stem end; cut strawberries into quarters, cutting down to but not completely through stem end. Set aside.
In small bowl, combine cream cheese, ricotta cheese, powdered sugar and almond extract; blend well. Pipe about 1 tablespoon cheese mixture into each cut strawberry.* Serve immediately, or cover and refrigerate until serving time.
To serve, drizzle each of 2 individual serving plates with 1 teaspoon syrup. Place 3 strawberries on each plate; garnish with mint leaf.
