Cream-Filled Strawberries

Ingredients

large fresh strawberries
1/4
cup 1/3-less-fat cream cheese (Neufchâtel), softened
1/4
cup light ricotta cheese
2
teaspoons powdered sugar
1/4
teaspoon almond extract or vanilla
2
teaspoons chocolate-flavored syrup, if desired
2
fresh mint leaves, if desired
  • 1 Wash and drain strawberries; remove stems if desired. Stand strawberries up on stem end; cut strawberries into quarters, cutting down to but not completely through stem end. Set aside.
  • 2 In small bowl, combine cream cheese, ricotta cheese, powdered sugar and almond extract; blend well. Pipe about 1 tablespoon cheese mixture into each cut strawberry.* Serve immediately, or cover and refrigerate until serving time.
  • 3 To serve, drizzle each of 2 individual serving plates with 1 teaspoon syrup. Place 3 strawberries on each plate; garnish with mint leaf.
