Cranberry-Orange Cake

Bake this delicious orange cake made with bread mix and cranberries; layered with mascarpone cheese mixture - a wonderful dessert.

Ingredients

package (16.6 oz) date quick bread mix
2/3 cup water
1/2 cup sweetened dried cranberries

tablespoons vegetable oil
1
1/2 teaspoons grated orange peel

oz (half of 8-oz container) mascarpone cheese
1/4 cup powdered sugar
1
tablespoon milk
Orange peel twists, if desired
  • 1 Heat oven to 350°F. Spray 7-inch tube pan with cooking spray; lightly flour. Place pan on cookie sheet.
  • 2 In large bowl, stir bread mix, water, dried cranberries, oil, grated orange peel and eggs until blended. Pour batter into pan.
  • 3 Bake 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.
  • 4 In small bowl, mix mascarpone cheese, powdered sugar and milk until smooth. Pour over cake. Garnish with orange peel twists.
