Ingredients

cup fresh or frozen cranberries
1/3
cup sugar
2/3
cup orange marmalade
1/4
cup orange juice
1
teaspoon cinnamon
1
pint (2 cups) vanilla or chocolate ice cream
Small wafer cookies, if desired
Fresh mint leaves, if desired

Directions

  1. 1 In medium saucepan, combine cranberries, sugar, marmalade, orange juice and cinnamon; mix well. Bring to a boil. Reduce heat to low; simmer 8 to 10 minutes or until cranberries pop and mixture is slightly thickened, stirring occasionally. Cool at least 10 minutes.
  2. 2 Place large scoops of ice cream in 4 dessert dishes or bowls. Spoon warm cranberry mixture over ice cream. Garnish with wafer cookies and mint leaves.
