Couscous with Vegetarian Spaghetti Sauce

Ingredients

cups water
1 1/3
cups uncooked couscous

(28-oz.) jar chunky vegetable spaghetti sauce
1
(15-oz.) can garbanzo beans (Chickpeas), drained, rinsed
1/8
to 1/4 teaspoon crushed red pepper flakes
2
tablespoons chopped fresh parsley

Directions

  1. 1 In medium saucepan, bring water to a boil. Stir in couscous. Cover; remove from heat. Let stand 5 minutes or until liquid is absorbed.
  2. 2 Meanwhile, in medium saucepan, combine spaghetti sauce, beans and red pepper flakes. Cook over medium heat for 5 to 7 minutes or until thoroughly heated, stirring occasionally.
  3. 3 Fluff couscous with fork. Serve sauce mixture over couscous; sprinkle with parsley. If desired, sprinkle with shredded fresh Parmesan cheese.
