Couscous-Stuffed Red Bell Peppers

box (5.7 oz) roasted garlic and olive oil-flavored couscous mix

cups water

large red bell peppers, cut in half lengthwise, seeds and membranes removed
1
cup chopped fresh spinach
1/4
cup grated Parmesan cheese

Directions

  1. 1 Cook couscous in water as directed on box, omitting oil; cover to keep warm.
  2. 2 Meanwhile, in 8-inch square (2-quart) microwavable dish, arrange bell pepper halves; add 2 tablespoons water. Cover with microwavable waxed paper. Microwave on High 3 to 4 minutes or just until crisp-tender.
  3. 3 Stir spinach and cheese into couscous. Spoon mixture into pepper halves.
