ladymav is on - i do this using corn relish - and since i find american cheese boring!! i use any other cheese; a really sharp cheddar; have used gouda as well

This is a fast and good recipe your family will love it. I make it for supper and my family is usual not one who loves breakfast type food for supper, but they love it. I will be making it again.

I''ve been doing something similar to this for many years, whenever I have leftover corn (on the cob or not). I''ll add sausage or bacon and cheddar cheese and sometimes even Swiss cheese. It''s a great alternative to the usual morning fare.
