Looking for a grilled side dish? Then check out these corn and salsa stuffed bell peppers sprinkled with mozzarella cheese and crisp bacon – a tasty meal.

Ingredients

cups frozen whole kernel corn, thawed*
1/4
cup sliced green onions
1/3
cup chunky-style salsa
2
green bell peppers, halved lengthwise, seeds removed

oz. (1/4 cup) shredded mozzarella cheese

slices bacon, crisply cooked, crumbled, if desired**

Steps

  • 1 GRILL DIRECTIONS: Heat grill. Cut four 14x12-inch sheets of heavy-duty foil. In medium bowl, combine corn, onions and salsa; blend well. Spoon into bell pepper halves. Place 1 stuffed pepper in center of each sheet of foil. Wrap each packet securely using double-fold seals.
  • 2 Place foil packets on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 20 to 25 minutes or until peppers are crisp-tender.
  • 3 Remove packets from grill; open packets. Sprinkle each stuffed pepper with 1 tablespoon cheese. Reseal packets; let stand 3 to 5 minutes or until cheese is melted. Sprinkle with bacon.

Expert Tips

* To quickly thaw corn, place in colander or strainer; rinse with warm water until thawed. Drain well.

** To cook bacon in microwave, place bacon on microwave-safe dish lined with microwave-safe paper towel. Microwave on HIGH for 1 to 3 minutes or until bacon is crisp.
