Did not turn out well for me. The cereal on top was indeed stale, the cookie was hard to cut, and the ice cream was mushy. Perhaps someone with better technique could do a better job, but didn't work out for me.

I have made this for years. There are many takes on it. You can substitute sugar cookie dough if chocolate is not an option for your family. Fresh strawberries, or any fruit is wonderful when you use sugar cookie dough and crisp. I served it like an ice cream sandwich when my son was young. Now he takes the pan with him.

Instead of the cereal topping, you can make these into sandwiches by doing a 2nd pan of the cookie dough & placing it on top of the ice cream once it's cooled.

Super easy recipe, but I would probably skip the Cookie Crisp on top next time. They were cute, but they seemed like they were getting stale by the time we ate it a few hours later. With so many cookie-ish things, I couldn't even tell when I got a cookie dough from the ice cream... (my fave part!) Using the foil was a great idea too, it would have been hard to get the pieces out of the pan without it! PS - not the best traveling desert, but it can be done with lots of ice packs and not accidently carrying it the wrong way.
